Today’s Summer round up is all about picnics. I don’t know about you but picnics are one of my all time favourite things to do and now that I live in Italy I have the luxury of the beautiful weather always being on my side. A super easy tuna pasta salad packed full of delicious Italian flavours. Mozzarella balls, spinach, cherry tomatoes, black olives and a simple oregano dressing.

Pasta salads are great at this time of year, they are simple and easy to throw together and can be made in advance making them great to take on picnics. Make this in the morning and your lunch is ready to grab and go later in the day.

You can make this pasta salad with anything you have in your fridge. I opted for simple, fresh flavours, little mozzarella balls, baby spinach, black olives, red onion and sweet cherry tomatoes. I almost always have all of these things in my fridge and there is always a ton of pasta stocked up in my cupboards too so this pasta salad was so easy for me to whip up.

When making pasta salads the thing to remember is to always rinse the hot cooked pasta under cold water to cool it right down. That way everything stays fresher for longer and if you’re using a creamy dressing it won’t get all sticky and claggy.

Although I love creamy dressings made with mayo or sour cream I decided to keep this one fresh and light using only olive oil, white wine vinegar, oregano and salt and pepper. When it’s so hot throughout the day, having something light and fresh is what I crave 90% of the time.

How to make this easy tuna pasta salad

To make this simple salad, cook the pasta until al dente, drain then rinse under cold water until cold. Meanwhile, chop the cherry tomatoes, red onion, parsley, and basil. Add them to a bowl alongside the tuna, olives, spinach, and mozzarella. Add the pasta and mix everything together.

How to make the simple oregano salad dressing

Add the olive oil, vinegar, oregano, and salt and pepper to a bowl and whisk for a few seconds to combine.

So simple and easy. Pour the dressing over the salad just before serving, if you’re planning on taking this for a picnic then make the salad dressing and pour it into a small container or plastic bottle then pour it over the salad just before you’re about to eat.

Easy Tuna Pasta Salad

A super easy tuna pasta salad packed full of delicious Italian flavours. Mozzarella balls, spinach, cherry tomatoes, black olives and a simple oregano dressing.

  • 11.6 oz (320g) fusilli pasta
  • 3.5 oz (100g) black olives
  • 6.7 oz (190g) cherry tomatoes
  • 5.2 oz (150g) mini mozzarella balls
  • 5.6 oz (160g) tuna
  • 1 large handful of baby spinach
  • 1 small red onion
  • 1 small bunch of basil
  • 1 small bunch parsley

For the dressing

  • 6 tbsp oil oil
  • 2 tbsp white wine vinegar
  • 1 tbsp dried oregano
  • 1 pinch salt and pepper
  1. Bring a large pot of salted boiling water to a boil. Cook the pasta according to packet instructions until al dente. Drain and rinse under cold water until cold.
  2. While the pasta is cooking slice the cherry tomatoes in half and finely chop the red onion, basil and parsley. Add the olives, tomatoes, red onion, spinach, tuna, mozzarella balls, basil and parsley to a large bowl. Add a pinch of salt and pepper and the cold pasta and mix to combine everything together.
  3. To make the dressing combine all ingredients in a bowl and whisk to combine. Pour over the salad right before serving.

How to make easy bean salad from scratch

Meanwhile finely chop garlic and tomatoes (seeds removed), add them to the pan with some oregano. Continue to cook the mixture for another 5 minutes before adding the canned cannellini beans. Remove the pan from the heat and add finely chopped parsley, basil, lemon zest and a little salt and pepper.

It’s easy as that. You can change it up with different vegetables such as zucchini, red pepper, cucumber, olives there are so many variations to this salad the list is endless.

Summer Easy Bean Salad

A warm easy bean salad with yellow pepper, eggplant, tomatoes, garlic and delicious fresh herbs. This makes a perfect Summer dinner or lunch alongside some char grilled crusty bread.

  • 1.6 lb (760g) canned cannellini beans (, drained*)
  • 1 eggplant/aubergine
  • 1 yellow pepper
  • 1 small red onion
  • 2 tomatoes
  • 2 cloves of garlic (, finely chopped)
  • 1 small bunch basil (, finely chopped)
  • 1 small bunch parsley (, finely chopped)
  • 1/2 tbsp dried oregano
  • zest of half a lemon
  • 1 tbsp olive oil
  • salt and pepper
  1. Remove the seeds and white from the pepper and finely chop that and the onion and eggplant. Add to a large frying pan with 1 tbsp of olive oil and cook down, stirring occasionally for 10 minutes.

  2. Meanwhile, remove the seeds from the tomatoes and finely chop. Add to the pan with the finely chopped garlic and oregano, stir. Fry for another 5 minutes.
  3. Add the cannellini beans and remove from the heat. Add the lemon zest, parsley, basil and a good pinch of salt and pepper, Stir to combine. Serve with some char-grilled crusty bread.

To make char-grilled bread (optional)

  1. Cut slices of ciabatta bread and drizzle with a little olive oil. Place on a hot griddle pan until toasted and slightly charred on each side, sprinkle with salt.

    Tip: This is especially good with goats cheese spread on top with this salad.

Watermelon and goats cheese salad

Watermelon, basil salad with mint, creamy goats cheese and balsamic glaze. This is a super quick summer salad that’s so light and refreshing.

  • 1.7 lbs (800g) watermelon
  • 5.2 oz (150g) goats cheese
  • 1 large handful of basil
  • 1 large handful of mint
  • 3-4 tsp balsamic glaze
  • 1 pinch salt and pepper (, to season)
  • olive oil (, to drizzle)
  1. Chop the watermelon up into small chunks of triangles and place on serving plates. Divide the goats cheese and scatter on top of the watermelon.
  2. Finely chop the mint and basil and scatter over the salad. Drizzle over a little balsamic glaze on each salad and finish with a sprinkle of salt and pepper and a drizzle of olive oil.

A delicious and simple farfalle pasta with pancetta recipe with fresh chili, garlic and a dash of cream. This simple pasta dish makes a great quick weeknight meal that’s delicious eaten hot or cold.

It’s used for both creamy and tomato based sauces and goes perfectly with this simple pasta with pancetta recipe. I’ve added just enough chili to add a subtle kick but you can add more to your liking or leave it out altogether to be more kid friendly.

This pasta with pancetta recipe is incredibly simple, with just five ingredients to make the sauce it’s all about flavours that pack a punch and smokey pancetta, fresh chili, garlic, cream and high quality chopped tomatoes do just that!

What’s your favourite pasta recipe or one that you cook quite often on weeknights? This recipe is one I go to often because it’s so quick, the sauce simmers away whilst the pasta cooks which is perfect for me when I don’t have much time on my hands. I mean I LOVE spending hours in the kitchen and I quite often spend my Sunday afternoons making homemade fresh pasta such as ravioli and tagliatelle with a rich and delicious ragú but through the week, time is often very tight and quick pasta dishes are a must.

To make this simple pancetta, tomato sauce, add the pancetta to a pan and fry until it’s starting to brown along with finely chopped fresh red chili and garlic. Add high quality chopped tinned tomatoes (I’ve learned that high-quality tinned tomatoes make the world of difference so this is a must) and a splash of water, salt, and pepper.

Let the sauce simmer away for around 4-5 minutes then add the cream, stir and let it simmer until the pasta is ready (around another 3-4 minutes). I like to add a small bunch of chopped parsley then stir in the farfalle pasta.

Farfalle Pasta with pancetta, Chili and Garlic

A delicious and simple farfalle pasta with pancetta recipe with fresh chili, garlic and a dash of cream. This simple pasta dish makes a great quick weeknight meal that’s delicious eaten hot or cold.

  • 11.2 oz (320g) farfalle ((bow tie) pasta)
  • 1.7 oz (50g) smoked pancetta (, cubed)
  • 14.8 oz (420g) chopped tinned tomatoes (, high quality)
  • 1/2 fresh red chili
  • 2 cloves garlic
  • 3.5 fl oz (100ml) water
  • 3.5 fl oz (100ml) cream
  • 1 tbsp oilve oil
  • 1 small bunch parsley
  • salt and pepper
  1. Bring a large pot of salted water to a boil. Add the olive oil to a large pan. Add the pancetta then finely chop the red chili and garlic and add to a pan. Stir the mixture and let the pancetta brown slightly. Add the farfalle pasta to the boiling water and cook according to packet instructions until al dente.

  2. Add the chopped tomatoes and water to the pan with a pinch of salt and pepper and stir. Let simmer for 4-5 minutes. Add the cream, stir and let it simmer again for around 3 minutes or until the pasta is cooked.

  3. Drain the pasta and add to the pan with some finely chopped parsley. Stir until the pasta is thoroughly coated in the sauce, serve.

Homemade basil pesto is spread over fresh cannelloni pasta and baked in a luscious cheesy provolone bechamel sauce and topped with mozzarella cheese, comfort food heaven!

This is proper cheesy comfort food heaven and is a fabulous vegetarian meal that will soon be a family favourite. This delicious pasta dish is fairly simple to make and to put together. It’s a great weekend meal that can be eaten as a traditional Italian starter or main course.

This pesto provolone cannelloni pasta is something I’ve been making for quite some time now. I decided to combine my love for pesto, cheese, and pasta all in one cheesy baked comfort food dish and it’s SO damn delicious!

The cannelloni is fairly easy to make, it requires homemade pesto (this is a must) homemade cheese (bechamel) sauce and fresh lasagne sheets which you can either make yourself or use store bought fresh lasagne sheets which are what I used to make this recipe.

Ok so let’s back up and talk about pesto for a second.

I have to say pesto is one of the best sauces in the world (for me anyway). Every time I make it I can’t help but lick the bowl clean afterward as if I was a child again baking something chocolatey and delicious (I still do this btw).

I prefer to add a little more parmesan than you normally see in recipes and I do prefer parmesan to pecorino in my pesto because it adds more tang. Also in most pesto recipes, you will see they will tell you to toast the pine nuts. I prefer not to, I like the creaminess that the un-toasted pine nuts give the pesto.

Homemade pesto is a must here, it’s the most important part to this recipe and the jarred stuff you get in the supermarket really shouldn’t be called pesto. It tastes nothing like the homemade stuff and will not taste anywhere near as gorgeous as this.

To make this cannelloni pasta, simply make a basic cheese sauce (see recipe below) with lots of provolone cheese then add a couple spoonfuls to the bottom of an oven proof dish.

The luscious pesto is mixed with a little cheese sauce before being spread over the cannelloni pasta (lasagne sheets) with an extra sprinkling of cheese. Then it’s rolled up and placed in the baking dish. The provolone cheese sauce is poured over the cannelloni and topped with mozzarella before being baked in the oven until it’s bubbling, melted and delicious.

Easy as that, I hope you enjoy this recipe as much as I do, It’s truely a comfort food favourite of mine.

Pesto Provolone Cannelloni Pasta

For the pesto:

  • 2 cups (50g) Basil
  • 1 garlic clove
  • 1 tbsp pine nuts
  • 1 tbsp lemon juice
  • 1/2 cup (60g) finely grated parmesan
  • 6 tbsp olive oil
  • Salt and pepper (, to taste)

For the white sauce:

  • 2 oz (50g) butter
  • 2 oz (50g) plain flour
  • 19 fluid oz (550ml) milk
  • 1 pinch of nutmeg
  • 7 oz (200g) provolone picante (, grated)
  • 1 tbsp parmesan (,freshly grated)
  • 3.5 oz (100g) ball of mozzarella
  • 9 lasagna sheets (,fresh)
  • salt and pepper (, to taste)
  1. Preheat the oven to 180°C/350F/gas mark 4.

  2. To make the pesto add the basil, garlic, lemon, parmesan, pine nuts, olive oil and a little salt and pepper in a bowl. Blitz until completely smooth with a hand blender. This will make an extra smooth pesto, set aside.

  3. Bring a pot of water to the boil. Meanwhile, make the white sauce. In a pan on a medium heat add butter until melted. Then add the flour and stir until it has formed a thick paste. Cook the flour out for a minute then gradually add the milk, whisking constantly to avoid any lumps. stir slowly until it starts to thicken. Add the nutmeg, salt and pepper and 2/3 of the provolone cheese. Continue to stir until thick and set aside. 

  4. Add 5 tbsp of cheese sauce to the pesto, stir and set aside. Add two small spoonfuls of cheese sauce to the bottom of an oven proof baking dish and spread out evenly, set aside.

  5. Add one lasagna sheet to the boiling water for a couple seconds. Remove with a slotted spoon and place on a clean work surface. Spread 1 tbsp of pesto over the lasagna sheet then sprinkle with a little provolone cheese. Roll the lasagna sheet up and place in the baking dish. repeat with the rest of the lasagna sheets.

  6. Pour the remaining white sauce over the top of the cannelloni and top with the mozzarella. Put the cannelloni into the oven and bake until bubbling and golden, around 20 minutes. Leave for 5/10 minutes to cool slightly and enjoy!

Italian green beans in tomato sauce is a simple and super delicious side dish that’s perfect alongside grilled or roasted meats or fish.

If you’re looking for a Summer side dish then look no further, these Italian green beans are the perfect accompaniment to all kinds of meals. Cooked in a simple tomato sauce with garlic, onion, and fennel seeds. They’re simple, easy to make and so delicious!

Right, back to these yummy green beans…

This green bean side dish originates from Florence (fagiolini in umido). I love these flat green beans (taccole in Italian) for look and texture but you can use any type of green beans, whatever ones you prefer or are available. I often make this for barbecues (p.s the leftovers are amazing) or as a light side dish alongside some roast potatoes or salad.

To make the simple tomato sauce, saute finely chopped red onion and garlic, fennel seeds and oregano for a few minutes until translucent whilst continuously stirring you don’t want to let it brown. Add canned chopped tomatoes, salt, pepper, and a little water and simmer for 5-10 minutes.

Top and tail the green beans and cut them in half or thirds then add them to the tomato sauce. Simmer for another 5-10 minutes until tender adding a little extra water if the sauce starts to dry out.

Done and done!

Oh, how I love a simple recipe and another reason why I love Italian food so much. There are so many simple recipes using few ingredients yet taste incredible. Fresh, high-quality ingredients are key, as always.

Italian Green Beans in Tomato Sauce

Italian green beans in tomato sauce is a simple and super delicious side dish that’s perfect alongside grilled or roasted meats or fish.

  • 14 oz (400g) green beans
  • 14 oz (400g) chopping canned tomatoes
  • 2 garlic cloves
  • 1 small red onion
  • 1 tsp oregano
  • 1 tsp fennel seeds
  • 3.5 fl oz (100ml) water
  • salt and pepper (, to season)
  • 1 tbsp olive oil
  1. Finely chop the garlic and red onion. Add to a pan with the oregano, fennel seeds and 1 tbsp of olive oil and saute until translucent (don’t let it brown).
  2. Add the chopped tomatoes, water, and a pinch of salt and pepper, let simmer for 5-10 minutes. Top and tail the green beans then cut in half or thirds. Add the beans to the tomato sauce and simmer for another 5-10 minutes until tender. Add extra water if the sauce starts to dry out.
  3. Serve.

I love a simple pasta dish and this speck and mushroom pappardelle couldn’t be simpler. Made with very few ingredients it’s another easy and delicious pasta dish that’s well loved in Italy.

If you aren’t familiar with speck, it’s a smoked, cured ham that originates from the north of Italy. It’s extremely popular in Italy and can be found in every supermarket in all forms from slices, cubes for frying and small blocks. If it’s not as readily available in your supermarkets where you are, then check out your nearest Italian deli or specialised food store. Alternatively, you can substitute smoked pancetta cubes which should be much easier to find.

Mushrooms are another love of mine, I mean pretty much all food is (obviously) but these add incredible flavour and texture to the whole dish. Traditionally this pappardelle recipe calls for Porcini mushrooms which have gorgeous flavour but are very expensive and while splashing out on Porcini mushrooms is something I’d do for a special occasion such as a birthday or anniversary, it’s definitely not how I eat on a normal weeknight. So modest champion mushrooms do the job quite nicely.

To make this simple pasta dish, firstly fry the sliced mushrooms in a little olive oil until browned then add the cubes of speck or smoked pancetta along with finely chopped shallot, garlic, and thyme. Fry for a few minutes then add the cream, let it simmer for a few minutes and thicken slightly. Add salt, pepper and half a tablespoon of freshly grated parmesan cheese and stir. Finally, add the cooked pappardelle pasta and toss through the sauce until evenly covered. Serve.

So simple and incredibly delicious, it’s sure to be a new favourite. I hope you enjoy!

Speck and Mushroom Pappardelle

Delicious speck and mushroom pappardelle pasta made with a simple and incredibly delicious creamy sauce and fresh ribbons of pappardelle. 

  • 3.5 oz (100g) speck or smoked pancetta (cubes)
  • 10.5 oz (300g) mushrooms
  • 1 cup (200ml) cream
  • 1 shallot (, finely chopped)
  • 1 garlic clove (, finely chopped)
  • 1.1 lbs (500g) fresh pappardelle
  • a small sprig of thyme
  • 1/2 tbsp parmesan (, freshly grated)
  • 1 tbsp olive oil
  • salt and pepper (, to season)
  1. Bring a large pot of salted water to the boil. Add the olive oil to a large pan and fry the mushrooms until browned. Add the speck or pancetta and the finely chopped shallot and garlic along with the thyme leaves.
  2. Fry for a couple minutes then add the cream. Add the fresh pappardelle pasta to the salted water and cook according to package instructions (around 3-4 minutes). Stir the simmering cream sauce for a few minutes until it’s started to thicken slightly. Add a pinch of salt, pepper and the grated parmesan. Take off the heat and stir.
  3. Drain the pasta and add to the creamy sauce, toss until evenly covered and serve.
