Salt the eggplant
Sprinkle salt over the eggplant to draw out the excess moisture.

Dust with flour
Dust the eggplant with flour then fry them in oil until golden. Make sure to drain them on kitchen paper.
Sauté the onions until soft to make the sauce.
Add the tomatoes
Add the tomatoes and basil and simmer the sauce.
Create the layers
Make layers of sauce, eggplant and mozzarella until you have used everything up. Bake until bubbling and golden!
