Ingredients

  • 2 medium-sized mandarins or 100% mandarin juice (1 part/50ml)
  • Prosecco (2 parts/70ml)

Instructions

  • Juice the fresh mandarins (about 2 per cocktail) in a bowl then pour through a fine strainer to get rid of any remaining pulp.
  • Fill a flute glass by ⅓ with the mandarin juice then top up with prosecco.

Notes

  • Pour slowly - by pouring the prosecco into the glasses slowly you avoid the cocktail overflowing as it reacts with the citrus juice.
  • Fruit to use - you can use mandarins, tangerines or clementines (whole fruits or juice).
