Dark Chocolate Almond Butter Cups

Little bite-sized dark chocolate cups filled with almond butter. Perfect for parties and entertaining.

Ingredients

  • 7 oz (200g) dark chocolate good quality
  • ½ cup (65g) almond butter unsalted
  • 1 pinch smoked sea salt flakes

Instructions

  • Lay out 20 mini cupcake/muffin cases on a baking tray. Break up 100g of the dark chocolate and put in a heatproof bowl over a pot of simmering water (make sure the bowl doesn't touch the water) stir occasionally until melted.
  • Spoon half a teaspoon of chocolate into each mini muffin case. Use the back of a teaspoon to draw the chocolate just over half way up the sides of the cases. Place in the freezer for 10 minutes.
  • Remove from the freezer and spoon half a teaspoon of almond butter into each case. Sprinkle each cup with a tiny pinch of smoked sea salt. Freeze for another 10 minutes.
  • Melt the remaining 100g of chocolate in the same bowl. Remove the cups from the freezer and spoon another half teaspoon of chocolate over each cup until the chocolate is finished. Freeze for 10-15 minutes. 
  • The cups can be eaten straight from the freezer or eaten at room temperature.

Notes

This recipe uses mini (bite-sized) muffin/cupcake cases but normal sized can also be used.
