Strawberry Sgroppino - a frozen fruity cocktail made with strawberries, sugar syrup, Cointreau and lots of bubbly Prosecco. This cocktail is perfect during the summer months, it's cooling, refreshing and so delicious!
To make the simple syrup, put the sugar and water in a saucepan and bring to a boil. Once the sugar has dissolved turn off the heat and let it cool completely (you should have around 3-4 tablespoons of sugar syrup).
Put the strawberries, cooled sugar syrup, Cointreau and prosecco in a blender and blitz until completely smooth.
Pour into glasses and serve.
Notes
Serve straight away - because it's frozen this isn't a cocktail you can make in large quantities in advance. Although you can double the recipe to serve more it's best served immediately.
Using strawberry sorbet - if you have strawberry sorbet you can use this instead (about 2 scoops per cocktail) just make sure to skip the simple syrup or the cocktail will be too sweet.
Serving suggestions - you can enjoy this as an after-dinner drink/dessert, a palate cleanser in between courses of a big meal or just to cool down on a hot summer day with some nibbles.
