Trentino-Alto Adige

Trentino-Alto Adige/Südtirol is a mountainous northern Italian region bordering both Austria and Switzerland. It’s broken into two provinces Trentino (Italian influence) and Alto-Aigde also known as Bolzano (Germanic influence).

The Germanic influence in this region is strong and the cuisine is not what you’d think of as typical Italian food. The cuisine features a lot of dumplings, soups, stews, polenta and cheese.
