Calabria

Calabria, a southern region in Italy known for itโ€™s bold flavours, rugged terrain and beautiful beaches.

โ€˜Nduja, a spicy, spreadable cured sausage (an one of our favourite ingredients) is widely used as is chilli in general. Other prominent ingredients include, eggplant (aubergine), pork, swordfish and of course, Tropea onions which are well worth hunting down in my opinion.
