Trentino-Alto Adige

Trentino-Alto Adige/Sรผdtirol is a mountainous northern Italian region bordering both Austria and Switzerland. Itโ€™s broken into two provinces Trentino (Italian influence) and Alto-Aigde also known as Bolzano (Germanic influence).

The Germanic influence in this region is strong and the cuisine is not what youโ€™d think of as typical Italian food. The cuisine features a lot of dumplings, soups, stews, polenta and cheese.
