Sgroppino is a delicious and refreshing Italian cocktail made with lemon sorbet, Prosecco and vodka. It’s super easy to make and is the perfect cocktail to celebrate summer!
Sgroppino (sgro-pea-noh) is a boozy and refreshing slushie that originated in Venice. Interestingly, Sgropin in Venetian dialect means to ‘untie a knot’ which refers to ‘untying’ your stomach after a large meal with a digestivo (digestif).
Besides an after-dinner drink, it also serves well as a palate cleanser in between courses. This would be perfect for special occasions (weddings, birthdays, Christmas etc).
A Sgroppino is so easy to make with just 3 simple ingredients, lemon sorbet (store-bought or homemade), vodka and Prosecco. There are a couple of different methods to making it (see below) but our preferred way is using a blender to get it extra frothy and delicious.

Ingredient notes
- Lemon sorbet – You can have a go at making our Amalfi lemon sorbet for this (it’s really easy) or just use your fave store-bought one. You can also switch it up with different flavoured sorbet such as strawberry or grapefruit!
- Vodka – it’s best if the vodka is chilled although don’t worry too much if it’s not chilled (it’s not something I drink often so it’s not usually in my fridge unless I remember to put it in for this cocktail). When it’s chilled it stops the sorbet from melting so quickly and gives you an extra cold cocktail.
- Prosecco – choose a good one you love and of course, make sure it’s chilled!
3 easy ways to make Sgroppino
Here are three easy ways to make a Sgroppino cocktail resulting in slightly different textures. The full recipe is below!
- Blender method – this is our preferred method as it gets a lot of air into the cocktail making it frothy, light and really delicious. Simply add all ingredients to a tall container and use an immersion blender (stick blender) to blitz. You can also use a regular blender.
- Whisk – another popular way to make this is in a bowl with a hand whisk. Whisk everything until combined and slushy. I’ve made it this way a few times and it’s delicious.
- The simplest method – this is the simplest way to make a Sgroppino. Add 2 scoops of sorbet to a flute glass, add vodka and top with Prosecco. This makes a kind of boozy cocktail float. The texture isn’t the same but it’s still cooling, refreshing and really delicious!
Fun variations to try
Here are a few really fun and delicious variations to try but you can get creative and choose whatever flavour combinations you like!
- Aperol Scroppino – orange sorbet, Aperol and Prosecco
- Campari Scroppino – grapefruit sorbet, Campari, Prosecco
- Strawberry Sgroppino – strawberry sorbet, Cointreau and Prosecco
- Melon Sgroppino – melon sorbet, elderflower liqueur and Prosecco
- Limoncello Sgroppino – lemon sorbet, Limoncello and Prosecco
- Select Sgroppino – blood orange sorbet, Select liqueur, Prosecco

Sgroppino cocktail
Ingredients
- 2 scoops lemon sorbet
- 30 ml (2 tablespoons) chilled vodka
- 100 ml (3 fl oz) chilled Prosecco, (can be adjusted to preferred consistency)
- lemon slices for garnish, (optional)
Instructions
- Put the sorbet, vodka and prosecco in a tall container and blitz with an immersion blender for 30-40 seconds until frothy and slushy. You can do this in a regular blender but it’s best to make a larger quantity (2 plus).
- Serve in a flute glass garnished with a slice of lemon (optional).
Alternative method
- Put all ingredients in a bowl and whisk with a hand whisk until frothy and combined.
Notes
- Quantity – you can easily scale the recipe up to serve more.
- Adjusting the recipe – you can easily adjust the qualities of all ingredients to your taste. If you want a thicker slushie consistency just add more sorbet.
- Serve immediately – The cocktail is best served immediately as the sorbet starts to melt. It’s not a cocktail to make in advance.
- How to serve – Serve your Sgroppino as an after-dinner drink during the summer, a palate cleanser or as a summer treat to cool down.
- Additional method – another super easy way to make this is by simply adding the sorbet to a flute glass, add vodka and top up with Prosecco. This with make a boozy sorbet float rather than slush.
