A fun autumn-inspired Pomegranate Spritz made with vibrant pomegranate juice, Aperol and lots of bubbly prosecco. It has the perfect mix of tart, bitter and fruity flavours and is so easy to make at home. Perfect for parties or for getting in the festive spirit!

If you love an Aperol Spritz then you’ll love this Autumnal take on it. I love using Pomegranate juice in cocktails because it’s so tart and full of flavour but not too sweet plus the colour is just gorgeous.

If you’re like my husband, Nathan and Campari is your go-to bitter then you can swap the Aperol for Campari instead.

To make this drink extra festive I made pomegranate ice cubes by adding pomegranate arils and water to an ice cube tray before freezing. They’re so pretty and make this cocktail look really impressive to serve to guests.

Nibbles to serve with your cocktail

As always, I love to suggest little nibbles to serve with our cocktails. Whenever you order a drink at a bar in Italy you are always served some sort of food whether it’s just nuts or chips (crisps) or some antipasti (meat, cheese, bread, olives etc). See some of our favourite nibbles below.

Ingredients

  • 2 oz Aperol, (60ml)
  • 3 oz 100% Pomegranate juice, (90ml)
  • 4 oz Prosecco, (120ml)
  • Rosemary sprig as garnish, optional
  • Ice cubes

Instructions 

  • Fill a tall glass or wine glass with ice.
  • Pour in the Aperol and pomegranate juice then top with Prosecco.
  • Stir to combine then serve with a sprig of rosemary (optional).

Notes

  • Adjust the cocktail to taste – if you’d like if more bitter add more Aperol or try using Campari instead. You can also add more pomegranate for a fruitier flavour.
  • Pomegranate ice cubes – I love to serve this spritz with homemade pomegranate ice cubes and they’re super easy to make. Fill an ice cube tray almost to the top then sprinkle in some pomegranate arils (seeds). Freeze.
  • Use 100% Pomegranate juice – make sure your juice isn’t mixed with sweeteners etc. You want 100% juice for that delicious tart flavour.
