    Classic Peach Bellini Cocktail

    A Classic Peach Bellini Cocktail made with fresh peach puree and bubbly Italian Prosecco. This cocktail is super easy, fruity, delicious and perfect for kicking off a relaxing weekend brunch or celebrating with friends! Ready in under 10 minutes.

    So What is a Peach Bellini and What does it Taste Like?

    Here it is, the classic Venetian cocktail made with only two simple ingredients (yes two), fresh peaches and prosecco!

    This cocktail is fuss-free, easy and is always sure to please a crowd, I mean, who has time for mixing extravagant cocktails when you're also prepping food? Noone.

    A peach bellini is sweet, fruity and super refreshing and has such a delicate flavour making it the perfect welcome drink or summer cocktail.

    It's traditionally served in champagne flutes but you can make this cocktail as fancy or casual as you like. I've gone for stemless wine glasses for a more rustic feel but on special occasions, I'll always reach for the flutes.

    How to Make a Peach Bellini - Step by Step

    First, make sure you have fresh and ripe peaches (underripe peaches won't work). Cut them in half, remove the stones and peel them to remove the skin.

    Roughly chop the peaches into medium-sized pieces then blitz them into a puree using a food processor or immersion blender (hand held). Make sure the puree is completely smooth and no chunks remain.

    Pour the peach puree into a large jug or pitcher (2 tablespoon per serving) and top with prosecco. Be careful when pouring as the prosecco will froth up a lot and can easily overflow.

    You can also spoon 2 tablespoon of peach puree into each serving glass and top up with prosecco.* see tips below if using this method

    How Long Does the Peach Puree Last?

    The peach puree will last covered in the fridge for around 4-5 days so if you have any leftover you can still use it to make more peach bellini cocktails at a later date or why not add it to smoothies, desserts or serve over ice cream!

    You can also freeze the peach puree in ice cube trays or in ziploc bags and defrost it as you need it OR don't defrost it and use it from frozen to make frozen peach bellinis, AMAZING!

    If you're entertaining friends and family or just treating yourself then you'll want some delicious nibbles to serve with your peach bellini, here are some recipes that would work great;

    • Stracchino and Sausage Crostini
    • Fried Gnocchi, Prosciutto and Pecorino Appetizers
    • Artichoke Dip – Parmesan, Lemon and Garlic
    • Sour Cream Pesto Dip with Prosciutto Dippers
    • Bruschetta al Pomodoro
    • Chicken Liver Pate – Tuscan Crostini

    Top Tips for Making a Classic Peach Bellini

    • No Prosecco? Any sparkling wine will work well
    • Making it for a crowd? If you're making more than one peach bellini then I recommend mixing it up in a large jug or pitcher then pouring it into individual glasses. The reason is that when the prosecco hits the peach puree it will froth and fizz up much more than usual so it can easily overflow. The puree will also leave a mark on the glass as it froths up so when the bubbles settle you'll have an unclean glass at the top which isn't great when serving to guests. Pouring it from a pitcher keeps your cocktails looking elegant and impressive!
    • No fresh peaches? You can also use canned peaches to make the puree!
    • Do I need to add sugar? No, if you use ripe peaches you shouldn't need to add any sugar this cocktail is sweet, fruity and fresh just as it is.
    • Make it alcohol-free by swapping the prosecco for a sparkling white grape juice, tonic water or regular sparkling water.
